Toaster Oven Single Sized Serving Chocolate Chip Cookies

In my last post I mentioned toaster oven chocolate chip cookies for two.  Again, this is about all the baking/creativity I’ve been able to manage lately.  When The Hubs isn’t home, it seriously comes down to living off of what I can make in the toaster oven.  I don’t know about you, but when I make cookies it looks like a flour bomb went off in the kitchen.  Also, multiple mixing bowls, mixer, multiple spoons, baking sheets, cooling racks – let’s just say the clean up can sometimes be so daunting for a 9 month pregnant lady that a box of chips ahoy sometimes wins over homemade cookie cleanup.  Not anymore!!!!  This recipe is awesome because all you have to throw in the dishwasher is one cereal-sized bowl, measuring spoons, and a 1/4 sized measuring cup – that’s IT!  Total homemade cookie cleanup I can get behind.  It’s quick, too; in less than 20 minutes you can be eating warm, gooey homemade chocolate chip cookies, which is great because my attention span lately… SQUIRREL!

The ingredients come together rather quickly too.  A nub of softened butter, vanilla, brown and white sugars, flour, baking soda, salt, an egg yolk and chocolate chips.  I have all these things in my kitchen at almost all times, so double bonus.  Let’s get started before I lose focus!

Preheat your toaster oven (or regular oven, if you do not have a toaster oven) to 350.  In a cereal sized bowl, mash together softened butter, both sugars, salt and vanilla with a fork.

Add the egg yolk and keep stirring until it all comes together.

Add the baking soda and flour, stirring until it’s all well-combined.

Lastly, add the chips!

Next, line the toaster oven with a sheet of foil.  Cut a sheet of parchment paper to fit overtop of the foil.  Form two balls of cookie dough evenly spaced apart on the parchment paper and sprinkle with sea salt (I used Maldon).  You can just as easily make four cookies instead of two if you have more mouths to feed.  These two cookies are pretty monster-sized.  Place the parchment paper holding the cookies on top of the foil.  Bake at 350 for 10-14 minutes.

Ingredients:
  • 2 tablespoons softened butter
  • 2 tablespoons plus 1/2 teaspoon brown sugar
  • 1 tablespoon granulated sugar
  • 1 pinch of kosher salt (2 fingers)
  • 1/4 teaspoon pure vanilla extract
  • 1 egg yolk
  • 1/4 teaspoon baking soda
  • 1/4 cup all purpose flour
  • 2 tablespoons chocolate chips

Method:

  1. Preheat toaster oven to 350.
