The Hubs and I usually kick off Friday nights with a dirty Gray Goose martini; extra dirt for me, extra olives for The Hubs. This past Friday, however, I realized we were out of The Goose. Whatever shall I do??? I foraged around in the deepest depths of the liquor cabinet and luckily found a dusty bottle of Ketel One vodka. I decided to go rogue from our cocktail norm. A few slices of fresh watermelon, mint leaves, lemon juice, simple syrup and you have a refreshing summer cocktail on your hands! It’s summer in a cup!
First things first, make your simple syrup. Take 1/2 cup of water and 1/2 cup of sugar and simmer in a pot until the sugar dissolves.
You’ll also need vodka, fresh mint leaves, watermelon (discard seeds and rinds), and the juice of one lemon. Buzz all ingredients up in your food processor or blender.
Serve over ice in a rocks glass with a straw, a sprig of mint, and a thin slice of watermelon. Thank me later!
Watermelon Minty Cocktail
- 5 1/2 ounces of vodka (or 3 large jiggers)
- 3 large pieces of watermelon, plus 4 small, thin slices for glass garnish
- 15 sprigs fresh mint
- juice from one lemon
- 1/2 cup simple syrup (1/2 cup of water and 1/2 cup of sugar)
Make your simple syrup, simmer 1/2 cup of water with 1/2 cup of sugar until sugar is dissolved. Add all ingredients to a food processor or blender and blend until smooth. Serve over ice in rocks glasses, garnish with small sliver of watermelon and a sprig of fresh mint.
