Even though March is technically over and sadly both Michigan basketball teams lost (sorry Mike Smith), I’m still going forward with a recipe post of my favorite buffalo hot wings! Wings are perfect fare for watching any type of sport, specifically tomorrow’s Monday night college basketball championship game. The Hubs taught me you can throw leftover wing bones at the tv when your team doesn’t perform to your expectations. This happened a lot during our first year of dating. Ok, I’m exaggerating, it wasn’t chicken bones, but he did toss the ottoman once and also threw many pillows at the wall during a few Michigan football games… His teams REALLY tend to disappoint. Anyway, this is a pretty easy recipe.
I bake my wings, partly because it’s healthier, but mostly because frying is way too labor intensive and stinks up our whole joint. Remove chicken from the fridge, rinse, pat dry and then let come to room temperature for an hour. In the meantime, preheat your oven to 425 degrees. Place a wire rack on a cookie sheet and set the wings on the wire rack.
Place wings in preheated oven and bake for 30 minutes, turning at the 15 minute mark. For the last 2 minutes, place the wings on your highest oven rack and crank your oven to “broil” to get a super crispy skin. Keep a close eye, making sure not to burn the wings. Remove from oven and set aside to rest on the wire rack.
Next step, prepare the buffalo sauce; whisk together the Frank’s hot sauce, Worcestershire sauce, and white vinegar in a saucepan over medium heat. Add butter and stir until melted, then remove from heat.
Either in the pot (if large enough) or a large bowl, add the wings to the sauce and toss well to coat. Don’t forget the bleu cheese dressing! See below for homemade yogurt style recipe.
Serve with bleu cheese dressing, celery stalks, carrots, and cucumbers.
Buffalo Wings
Prep time: 1 hour (for tempering meat)
Cook time: 30 minutes

- 2 lbs chicken wings
- 2/3 cup Frank’s Original hot sauce
- 1/2 cup butter
- 1 1/2 tablespoons white vinegar
- 1/4 teaspoon Worcestershire sauce
-Homemade Bleu Cheese Yogurt Dressing-
- 1/2 cup greek yogurt
- 2 tablespoons milk (skim works)
- 1/4 cup bleu cheese, crumbled
- 1/4 teaspoon Worcestershire sauce
- salt & pepper to taste
1. For the wings, place on a wire rack on a cookie sheet in an oven preheated to 425 degrees. Cook for 30 minutes, turning halfway through.
2. While the wings are baking, make the bleu cheese dressing. Mix together all bleu cheese ingredients and place in fridge to chill. Don’t over mix, dip should be chunky with blue cheese.
3. Back to the wings, place on topmost oven rack, crank the oven up to broil and broil for last 2 minutes. In a saucepan over medium heat, mix together the Frank’s, butter, vinegar, and Worcestershire. Cook until butter melts and sauce is well blended.
4. Toss wings with buffalo sauce and serve with bleu cheese dressing, celery, cucumbers, carrots, and BEERS.
PS, if you like your heat to be more on the atomic level, add a teaspoon of cayenne pepper to the buffalo sauce along with a pinch of red pepper flake. Keep cold beer nearby!
